Do I need a variable temperature kettle or will any kettle do?

For specialty coffee brewing, a variable temperature kettle is strongly recommended. Different brewing methods and roast levels call for different water temperatures — lighter roasted pour over beans typically extract best at 93–96°C, while some methods benefit from slightly lower temperatures. A standard kettle that boils to 100°C and has no hold function makes hitting a specific target temperature difficult. What is the correct coffee-to-water ratio for filter brewing?

A common starting point for most filter and pour over methods is a ratio of 1:15 to 1:17 — meaning 1g of coffee per 15–17g of water. For example, 20g of coffee to 300–340ml of water. This produces a well-balanced cup for most beans and roast levels. Adjust to taste: if the coffee is too strong, increase the water or reduce the coffee dose; if it tastes weak or under-extracted, do the opposite.
