How does cold brew differ from iced coffee?
Iced coffee is hot-brewed coffee that is then chilled or poured over ice — it retains the acidity of hot extraction and tends to taste more bitter and dilute as the ice melts. Cold brew is extracted using cold water from the start, over a long steep time of 12–24 hours. The cold-water extraction process draws different compounds from the coffee than hot water does — specifically, it extracts significantly less of the acids and bitter compounds that hot water releases quickly. The result is a concentrate that is naturally smoother, sweeter and lower in acidity than any chilled hot coffee, with a flavour profile that holds up well over ice and dilution without tasting flat or bitter.
How long does cold brew concentrate keep?
Cold brew concentrate made with the Toddy home system keeps for up to two weeks refrigerated in the glass decanter. This is one of cold brew's most practical advantages — a single batch brewed on a Sunday lasts the whole working week and beyond, ready to pour over ice or mix with water or milk in seconds. Once diluted, cold brew should be consumed within a day or two. Commercial batches follow the same general principle, though production volumes and turnover in a café environment typically mean batches are consumed well within that window.
What grind size should I use for cold brew?
Coarse — similar to the grind used for a French press, or slightly coarser. A coarse grind slows extraction during the long steep, preventing over-extraction and the bitterness that comes with it. A medium or fine grind will over-extract during a 12–24 hour steep, producing a harsh, bitter concentrate rather than the smooth result cold brew is known for. If you're using a burr grinder, set it to your French press setting and grind fresh for each batch. The Toddy home system is particularly forgiving of minor grind variation given the long steep time, but a consistent coarse grind reliably produces the best results.
How much water and coffee do I use for the Toddy home system?
The standard Toddy home recipe uses 340g (12oz) of coarsely ground coffee and 1.7 litres (56oz / 7 cups) of cold water. This produces approximately 1.1 litres of concentrate after straining — enough for 11 cups when diluted 1:1 with water, or up to 22 if you prefer a lighter ratio. Toddy also recommends a two-stage water addition — add half the water first, wait a few minutes for the grounds to fully saturate, then add the remaining water — to ensure even wetting of the coffee bed. Total steep time is 12–24 hours in the fridge; 12–16 hours tends to produce a brighter, lighter result, while 20–24 hours produces a heavier, more concentrated cup.
Can I make tea or other drinks with the Toddy system?
Yes — the Toddy cold extraction method works equally well for tea, producing a very smooth, clean cold brew tea concentrate with none of the bitterness that hot-steeped tea can develop. The same principle applies: use a coarser leaf or larger tea bags, steep in cold water for 6–12 hours (tea extracts faster than coffee in cold water), and dilute to taste.
