About Five Ways Coffee Roasters
Five Ways Coffee Roasters is a specialty coffee roastery based in West Amsterdam. Their approach focuses on showcasing the unique character of each coffee they source, with an emphasis on clarity, balance, and expressive flavour profiles.
About the Coffee – Colombia, Las Flores
This coffee comes from Finca Las Flores, a family-run farm founded by Edilberto Vergara and Nubia Ayure. What started as a small two-hectare farm has grown into a 16-hectare operation focused on quality and innovation.
The farm gained wider recognition after Nubia placed in the 2006 Cup of Excellence, and has since become known for its experimental processing and high-quality lots. Jhoan Vergara, alongside his brothers Carlos and Diego, has continued to develop the farm’s approach, refining fermentation and drying techniques to produce distinctive coffees.
What Makes This Coffee Special
This lot uses a washed oxidation process designed to push flavour development while maintaining clarity.
The process includes oxidation in cherry, extended fermentation, thermal shock washing, and controlled drying. These steps are carefully managed to build complexity, enhance fruit character, and preserve a clean, structured cup profile.
